The UPS basically plugs into the mains and the server then plugs into the UPS. If the mains fails the the UPS continues to supply power to the server for a certain period of time. The more expensive the UPS, the longer it will last. If the mains still hasn't come back on and the battery in the UPS is starting to run out, the UPS can tell the server to shutdown as you would do manually, i.e. cleanly rather than just pulling the plug.
